Recipe: Pork Loin Roast (Boned & Rolled)

A delicious and simple Pork Loin Roast Recipe sent in by one of our lovely customers. We hope you enjoy!

 

FOR THE RUB:

+ Fresh Lemon Thyme & Normal Thyme (1 large handful of each)

+ Lemon Zest (1 Lemon)

+ Lemon Juice (2 tablespoons)

+ Garlic (6 Cloves)

+ Olive Oil (4 tablespoons)

+ Salt & Pepper

 

FOR THE PAN:

+ 1x Large Onion (sliced)

+ 3x Green Apple (sliced)

+ Brown Sugar (to be sprinkled on sliced apple/onion) (2 tablespoons)

+ 1x Large Sweet Potato (diced)

+ 3x Large Potatoes (diced)

 

TO COOK:

+ Place meat in pre-heated 240⁰C oven for 35 mins

+ Reduce oven temperature to 180⁰C for the remaining cooking time allow 30-35 minutes per kg (Add-in roast prepared vegetables now)

+ Remove pork from the oven and allow to rest in the roasting pan for 10-15 minutes prior to slicing.
